With a visit to the medieval market we can savour the sights and smells of some of the most famous gastronomic specialities of Bologna: tortellini, mortadella and different types of salami. tortellini Pork has always dominated the cuisine of the town, since as far back as the Etruscan period (pig bones were found in an ancient well near to Bologna). Every year, during the celebrations of SanBartolomeo, at the end of August, the feast of the suckling pig takes place, an event dating back to 1796 and recently revived in 2002. On this occasion the suckling pig is cut into slices and distributed, along with bread and wine under the arches of the churches of San Bartolomeo and San Gaetano.
